I love Cantonese food. What I’m not a big fan of is the old-school Cantonese restaurant dining rooms that are more like mess halls than restaurants. What I prefer is to be able to enjoy my Cantonese food in a beautiful and vibrant setting! Does such a place exist? Yes! Discovering the Madame Fan Restaurant in Singapore was a dream come true. To get the evening started, I went for a few cocktails at their bar. My recommendations would be the Rendition 3.2 and the (Not) Classic PB&J. These cocktails were created by the incredible mixologist and were both quite unique and enjoyable. The Rendition 3.2 includes green chili and citrus which really got me excited! An incredible level of freshness and spiciness, the perfect drink for Pierre.

I went for a five course tasting menu at the Madame Fan Restaurant. From start to finish the food was simply incredible. Starting out with the Sri Lankan Mud Crab Wonton was a great place to start, booming with flavor.

Next up were two duck dishes, one salad with pomello and one as Beijing Duck, but using a Scottish duck, they did have a different accent. So much juiciness, yet crispy on the outside made for a perfect evening of duck consumption. The Four Treasure Soup was a standard Cantonese style fish maw soup which included Hokkaido scallops. I loved it, but it was just too much to fit in my stomach, so sadly I only consumed half.

The Australian Black Angus Beef Tenderloin melted in my mouth because it was cooked perfectly. This was served alongside Taiwan Noodles which were a bit more subtle compared to the black pepper sauce of the beef.

To finish off the evening, the dessert was a Raspberry Sabayon. The service throughout the meal couldn’t have been better, the staff were great! The ambiance was magnificent and apparently a few days a week they offer live music, which I would love to try next time. Personally, the wine list wasn’t my favorite so I’d vote for cocktails! If you’re in Singapore and looking for top-notch Cantonese food in an elegant setting, I’d definitely recommend the Madame Fan Restaurant at the JW Marriott Singapore South Beach Hotel!
