I think most people will recognize the Marina Bay Sands in Singapore. If you’re not familiar, it’s the giant building that sits along the marina with the giant surfboard on top. There are tons of dining options and ways to entertain yourself there. A restaurant that I have been interested in visiting is called Sky on 57. Luckily, on my recent trip to Singapore I gave it a shot!

When you consider that the restaurant is on the 57th floor, and has a beautiful view, we can easily understand where they get the name from. Before dinner even started, I got a tour of the sky deck and some amazing photos. This is just a beautiful view!

The restaurant is by Justin Quek who is Singapore’s only celebrity chef. Justin is great and we had a chance to discuss very important topics, such as tasty food around Asia. It’s nice to know the people behind the food! I decided to go with the gastronomic set menu, with wine pairing of course. Justin was trained in France but the food is definitely inspired by Asia. There were too many dishes to talk about all of them but I’d like to highlight my favorites.

The first that really stood out was Justin’s signature foie gras xiao long bao. These were a magnificent soup dumplings with iberico ham and baby abalone all sitting in a golden broth. Delicate yet super tasty! They even topped them off with a little gold foil. Boss life indeed.

The next dish that was absolutely breathtaking, was the duo of French pigeon. I especially loved it! The texture of the skin was perfectly crispy with a very juicy and tender meat to match. Just fantastic!

Can I have a drumroll please… This next dish is stuck in my memory. This of course was the Kagoshima wagyu beef. I am a huge fan of wagyu, but who isn’t? This was like eating butter but in reality, it was actually beef. So silky, soft and full of flavor crusted with Szechuan pepper. Well done Justin.

The meal was already so good I honestly didn’t put too much thought into dessert. However, when I started eating the “texture of chocolate” dessert, my mind was once again blown! This was during the conversation with Justin that I was eating the dessert. I remember specifically trying to focus on the conversation, yet also enjoy this wonderful masterpiece which kept demanding my attention.

I mentioned we went with the wine pairing earlier and I must also highly recommend you to do the same. Whoever chose the wines is a genius. They all were extraordinary and fit with all of the food effortlessly.

To finish off the meal and to help the stomach do it’s work digesting, I went with a 1963 Christian Drouin Domaine Coeur de Lion Vintage Calvados which is a super-aged apple brandy.

When it was all said and done, I was so happy that I made the visit to Sky on 57. The view alone was enough reason to go, but when it’s paired with some of the most amazing food and alcohol around, you’ve got yourself a recipe for quite an amazing time! You absolutely must visit Sky on 57 by Justin Quek as soon as humanly possible! Go go go!
