While staying at the Fairmont hotel in Singapore, which you can read about in a separate article, I had the pleasure of eating at their Prego restaurant for a dinner. The Prego restaurant is located on the first floor of the Fairmont Singapore. It’s quite easy to find because it’s connected to the main lobby. I was very excited to have some Italian food after a long time without!

I was able to meet the Italian chef who is from the north of Italy, and he prepared a tasting menu paired with some lovely wine. From the first few bites of food, I knew I was in for a treat! We started off with a sample platter that included octopus, ham and mozzarella. I must say, these got me so excited! The octopus was cooked just perfectly, very soft and tender. This was paired with a lovely 2015 Sartori Soave Classico.

Little did I know that the meal would just get better and better. The next course included a spicy signature pasta, squid ink spaghetti and a pumpkin tortellini. I must say that the spicy pasta was my favorite. I could it it all day!

I was already stuffed at that point, but I managed to eat a plate of fish and then it was time for the tiramisu. Luckily, the staff were kind enough to offer up some lemoncello with my dessert. Incredible! I had no idea what to expect when I entered this restaurant, but I am so happy I did!
