I have been exploring Korean cuisine in Seoul now for about three months. Along my journey through this amazing food, I have found one dessert in particular that I have fallen in love with. It’s called bingsu and typically where I go to consume it is at a place called Sulbing. It’s a chain dessert café that is all over Seoul so it’s super easy to spot. At this point I would have to say I feel like quite the professional when it comes to this dessert. Now I have had it four times each time trying it I’ve had a different flavor and my mind explodes every time.
This dessert is a little bit hard to explain to people who have never tried it. At first glance it appears to be a giant ice cream sundae when in reality it’s not quite as it appears. Mysterious I know. Actually, bingsu is mostly made up of shaved milk ice stacked with heavenly toppings of your heart’s desire. I’ve tried ones with strawberries, mango, chocolate and blueberries.
My personal favorite tends to be the ones with bits of cheesecake on it. The menu just calls it cheese but it tastes more like cheesecake so don’t be weirded out when you read simply “cheese.” It’s not overly sweet which leads me to believe it’s lower in calories (not confirmed but I’m a professional so you can believe me.)
If you are human and not allergic to dairy then you can’t go wrong with this dessert. Even if you are allergic to dairy it might be worth going to the hospital to try 😛
